How to Make Sponge Cake with a Rice Cooker

Whisk the Egg Whites
First, sift 60g of all-purpose flour and 40g of cornstarch until smooth. Then separate the egg yolks and egg whites into 2 separate bowls.
Add 1/2 teaspoon of salt and 4-5 drops of lemon juice to the egg whites and whisk well with a whisk.
When the eggs are foamy, gradually add 70g of sugar, whisking constantly until the sugar dissolves before adding the next batch. Beat until the egg whites are stiff, forming stiff peaks when you lift the whisk.

Mix the Egg Yolk and Flour Mixture
Add 1/2 teaspoon of vanilla, 30ml of sweetened condensed milk and 15ml of cooking oil to the egg yolk bowl and whisk well.
Then, pour the sifted flour and cornstarch mixture into the bowl and whisk until smooth.

First, add about 1/3 of the whisked egg whites to the egg yolk and flour mixture and whisk until well combined.
Then, add the combined mixture to the remaining whisked egg whites and gently fold using the Fold technique (scoop and lift the ingredients from the bottom up).
Fold in one direction until just combined (about 5 minutes), do not overmix as this will make the cake tough and less fluffy.

You can line the bottom of the rice cooker with parchment paper for easier removal after baking. Pour the batter into the rice cooker and press the cook button.
If your rice cooker has a bake setting, select it and wait about 40 minutes for the cake to bake.

After the set time, open the rice cooker lid and gently press the surface of the cake with your finger. If the surface doesn’t indent, the cake is cooked. Let it cool slightly before removing.
If the cake is not fully cooked, close the lid, press the cook button again, and wait another 5-10 minutes.
