Make Tapioca Pearls
Mix 100gr tapioca starch and 10gr cocoa powder evenly.
Next, put a pot on the stove, add 80ml water and 5 tablespoons of sugar, stir to dissolve the sugar and bring to a boil over medium heat. Add the mixed flour mixture and turn off the heat, stir with a spoon until the dough is sticky and firm, then knead continuously with your hands until it doesn’t stick to your fingers.
Next, sprinkle some tapioca starch on a cutting board (or table) and place the dough on top, apply a little tapioca starch to your hands to prevent sticking, then skillfully roll the dough into small round balls!
Tip: To prevent the tapioca pearls from sticking together, coat them with a little dry tapioca starch after rolling them!
Continue to boil about 1 liter of water, then add the tapioca pearls to the pot and cook over medium heat for about 10-15 minutes until the pearls are cooked and float to the surface. To ensure the pearls are cooked, you can try them to see if they are soft, slightly chewy, and not hard inside.
Finally, remove the tapioca pearls and soak them in cold water for about 2-3 minutes, then remove and drain!
