Remove the shrimp heads, peel the shells, remove the black vein on the back, and keep the tails.
Then, wash the shrimp with diluted saltwater, rinse with fresh water a few more times, and drain.

Mix the batter
First, add 100gr all-purpose flour to a bowl, then crack in the egg and add 70ml of water. Whisk well.

Prepare and Marinate Shrimp

To remove the shrimp head’s content, cut between the head and body and pull out the black vein.
After prepping, marinate the shrimp with 1 teaspoon of seasoning powder, 1 teaspoon of sugar, and some ground pepper. Mix well.
Add the egg yolk and mix well.

Mix the batter
Combine 35g tapioca starch, 3 teaspoons of batter mix, 3 teaspoons of baking powder, 3 teaspoons of cornstarch, and 1 tablespoon of all-purpose flour in a bowl. Mix well.
Gradually add water to the dry ingredients and stir until the batter is just pourable. Avoid adding too much water, as the batter should be thick enough to coat the shrimp.
