How to choose fresh chicken
- Fresh chicken has a yellowish, attractive skin with no bruises.
- Choose chicken with bright pinkish-red meat, not too dark. It should feel firm and spring back when pressed.
- Avoid chicken that is slimy or unusually large but light in weight, as it may be water-injected.
How to choose fresh carrots
- Fresh carrots are usually a deep, bright orange. The skin should be smooth and shiny, not rough or scratched.
- The stem should be fresh and green, firmly attached to the carrot. The carrot itself should feel firm, not soft, when gently pressed.
- Avoid carrots that are bruised, soft, or slimy, as these are spoiled and inedible.
How to Make Shredded Chicken Salad

1. Prepare the Ingredients
First, rub the chicken with a little salt for 3-5 minutes, then rinse several times with water until clean and let it drain.
Peel the carrots, wash them thoroughly under running water, let them drain, and then slice them thinly.
Peel the onion, cut it in half, then slice it thinly. To remove some of the onion’s pungency, soak it in ice water for 10-15 minutes, then remove and drain.
Remove the seeds from the horn pepper and slice it thinly. Peel the ginger, wash it, let it drain, and then lightly crush it.
Pick the young leaves of the Vietnamese coriander and wash them along with the kaffir lime leaves. Drain. Muddle 4 kaffir lime leaves and finely chop the rest; roughly chop the Vietnamese coriander.

2. Make the Dressing
