Bruise and cut the lemongrass into 5cm (2-inch) pieces.
Cut the tofu into 6 small cubes. Cut the tomatoes into wedges.
Remove the stems from the lá lốt leaves and chop them as desired. Chop the cilantro and green onions into 1.5cm (½-inch) pieces.
