What is Heavy Cream?
Heavy cream is a dairy product, also known as heavy whipping cream. It’s often used in baking and cocktails. Heavy cream has a firm texture, holds its shape well when whipped, and has high definition.
How to differentiate heavy cream and whipping cream
- Fat content: Heavy cream has a fat content of 36-40%, while whipping cream has a fat content of 30-36% and contains no sugar.
- Texture: Heavy cream has a firmer, more stable whipped texture than whipping cream.
- Heavy cream is often used for whipped toppings, baking, etc., while whipping cream is used more for beverages or as an ingredient in some desserts.
What is Gelatin? Where to Buy It?
- Gelatin is a food ingredient extracted from collagen found in the bones and skin of animals (e.g., pig skin). Gelatin is an odorless (those with sensitive noses might detect a slightly unpleasant smell), tasteless protein, but comes in both transparent and slightly yellowish varieties.
- There are two common forms of gelatin: sheet and powder; both have the same quality. Note: If using powdered gelatin, use 6g of gelatin powder + 250ml of liquid; if using sheet gelatin, use 3 sheets of gelatin + 250ml of liquid.
- You can buy gelatin at baking supply stores, supermarkets, or online retailers.
Where to Buy Dark Rum?
Dark rum can be found at liquor stores specializing in imported spirits. You can also find it at stores selling baking supplies, desserts, or cocktail ingredients. You can also check reputable online retailers.

What is Panna Cotta?
- Panna Cotta (meaning “cooked cream” in Italian) is a dessert made from a mixture of cream, milk, sugar, and gelatin.
- The first panna cotta recipe originated in Northern Italy, where people traditionally set the cream mixture with fish bones (the collagen in the fish bones would solidify the cream) to create this pudding. However, with the development of the baking industry, gelatin is now used to make panna cotta, resulting in a smooth, melt-in-your-mouth texture.
