1. What is sturgeon?
Sturgeon is the common name for a genus of fish with the scientific name Acipenser, which includes 21 species recorded in scientific reports. This is not only one of the largest freshwater fish, but also one of the longest-lived, with some individuals living up to 150 years.

A few other species live entirely in freshwater (the Delaware River, Rhine, Garonne, Elbe, Volga, Danube and Lake Ladoga).

Common Sturgeon
The common sturgeon, also known as the European sturgeon, Baltic sturgeon, or Atlantic sturgeon, has the scientific name Acipenser sturio. They are distributed in all seas of Europe, except for the Black Sea.
This species can grow up to 4m long. They have 11-13 bony plates along the back and 29-31 along the flanks. Their mouths change with age, becoming blunt and short in older fish.
The European sturgeon is now being pushed to the brink of extinction due to overfishing.
Russian Sturgeon
Russian sturgeon (Acipenser gueldenstaedtii) is one of the high economic value fish in Russia. They are similar in size to the common sturgeon and are found in many rivers flowing into the Black and Caspian Seas.
More than 1/4 of the caviar and other processed products in Russia and Iran come from this species.
Stellate Sturgeon
The stellate sturgeon, with the scientific name Acipenser stellatus, lives mainly in rivers flowing into the Black and Azov Seas of Russia. They have a long and pointed nose, but the difference is that they have only one barbel without fringes.

Sterlet
