How to Make Fried Spring Rolls
-
Prepare ingredients and make the spring roll filling
Wash the pork and mince it finely.
Next, wash the bean sprouts and squeeze out the excess water.
Peel and wash the carrots and onions, then julienne them. Finely chop the green onions.
Next, soak the wood ear mushrooms in warm water for 15 minutes until softened, then wash and mince them.
Quickly blanch the vermicelli noodles in boiling water to soften them, then cut them into small pieces with scissors.
After preparing the ingredients, put them all in a large bowl, then add 2 egg yolks, 2 teaspoons of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of ground pepper, and mix well. You can adjust the seasoning to your liking. Marinate for 15 minutes for the filling to absorb the spices.
-
Roll the spring rolls
Spread a rice paper wrapper on a cutting board, then use a clean towel dipped in water to lightly wipe the surface of the wrapper to soften it for easy rolling. Continue by spreading half a rice paper wrapper in the middle to prevent tearing when rolling.
Use a spoon to scoop about 3 fingers worth of filling and spread it on the top of the rice paper. Then roll tightly twice and stop to fold the two ends of the wrapper. After folding, continue rolling until the end of the wrapper.
At the end of the wrapper, apply egg white to create stickiness. Then round the spring roll to make it look nice.
Repeat the above steps until all the filling is used up.
-
Fry the spring rolls
Place the pan on the stove and turn on high heat to heat the pan. After the pan is hot, pour in enough cooking oil to submerge the spring rolls.
Tip: You should use [product name missing] to save cooking oil while ensuring that the spring rolls are evenly golden and crispy when fried.Wait for the oil to simmer, then drop each spring roll in and reduce the heat to low. After frying for about 3 minutes, flip the spring rolls and continue frying for another 3 minutes.
When the spring rolls are golden brown on all sides, use chopsticks to remove them and drain the oil. At this point, you can divide the portion to store for later consumption.
Tip: At mealtime, you can put the spring rolls in an air fryer at 200 degrees C for 6 minutes if frying immediately after the above step. If taken from the refrigerator, set the time to 7 minutes. -
Make the dipping sauce
Put fish sauce, sugar, and water in a pot at a ratio of 1:1:3, then put it on the stove and bring to a boil to dissolve the sugar.
Peel and mince the garlic. Remove the stems and seeds from the chili peppers, then mince them. Clean, wash, and mince the coriander.
When eating, simply add 2 teaspoons of lemon juice, minced garlic, chili, and coriander to the boiled fish sauce and sugar mixture, then stir well with a spoon.
