Instructions for Bird’s Nest with Rock Sugar

Prepare the Bird’s Nest
If you purchased raw, unprocessed bird’s nest, you need to clean the feathers and impurities before steaming.
Soak the bird’s nest for 1-2 hours, depending on the type and thickness of the nest, until it softens.
Use tweezers to carefully remove any impurities and feathers.
Separate the bird’s nest into strands. Place the strands in a sieve over a bowl of water. Gently stir with a spoon, lifting the sieve up and down. The fine feathers will flow out with the water. Repeat this process with fresh water until the nest is clean.
If you don’t use all of the cleaned bird’s nest, let it dry completely and store it in an airtight container in the refrigerator.
For pre-cleaned bird’s nest, soak it in cold water for about 20 minutes before steaming to soften.
-
Steam the Bird’s Nest
Place the bird’s nest and some rock sugar in a bowl. Add enough water to cover the nest and sugar.
Place the bowl in a pot with water reaching about 1/4 of the bowl’s height. Cover both the bowl and the pot.
Bring the water to a boil over high heat, then reduce to the lowest setting and simmer for about 20 minutes, or until the bird’s nest is tender. Turn off the heat.

Finished Product
Enjoy the bird’s nest warm or cold. You can add a couple of thin slices of ginger, dried longan, or jujubes to enhance the flavor and reduce any fishy smell.

How to Choose Fresh and Delicious Pears
- Choose pears with a moderate amount of red coloring. If you prefer a slightly tart flavor, choose pears with lighter red coloring.
- Choose pears with stems that are still firmly attached to the fruit. A firmly attached stem indicates that the fruit is still quite fresh.
- Gently press the pear with your finger. If the flesh feels slightly soft, it’s a good choice. Avoid pears that are too soft, as they are overripe and won’t taste as good.
Instructions for Bird’s Nest with Rock Sugar and Sweet Pear
-
Prepare and Boil the Bird’s Nest
Soak 1 piece of bird’s nest in a bowl of water for about 40 minutes.
Then, tear the bird’s nest into smaller pieces and use a sieve to separate the nest from the soaking water.
-
Prepare the Pear
Wash, peel, and core the pear, using a spoon to create a bowl shape with walls about 1cm thick. Be careful not to pierce the bottom. Dice the removed pear core to steam with the bird’s nest.
-
Add Bird’s Nest to the Pear
Place the bird’s nest inside the hollowed-out pear, along with 1 teaspoon of rock sugar, 2 goji berries, and 1 dried apple. Cover the pear with its top.
-
Steam the Bird’s Nest
Place the pear on a small plate. Add water to the bottom of a pot, then place the plate with the pear inside to steam over low heat for about 30 minutes, or until the bird’s nest is tender. Turn off the heat.

Some Information About Bird’s Nest
- Bird’s nest is rich in nutrients and easy to digest, so it is often used to nourish and strengthen the health of malnourished children, people recovering from illness, the elderly, postpartum mothers, pregnant women, etc.
- Bird’s nest contains threonine, which forms elastin and collagen, two compounds that have positive effects on women’s beauty and skin, such as reducing acne, brightening and smoothing skin, reducing melasma, and preventing aging.
- Especially, bird’s nest steamed with rock sugar has the effect of nourishing the lungs and relieving chronic coughs.
Tips for Successfully Making Bird’s Nest with Rock Sugar
- Do not steam the bird’s nest for too long or too quickly, or add too much rock sugar, as this will reduce the nutritional value of the dish.
- Use bird’s nest regularly and in moderation. Do not consume too much at once, as the body cannot absorb all the nutrients, leading to waste. Exceeding the recommended dosage can also easily cause abdominal discomfort and diarrhea due to the cooling nature of bird’s nest.
- When processing bird’s nest, maintain a moderate temperature, do not let it boil above 100 degrees Celsius. Steam it indirectly, rather than cooking it directly.
- You can steam bird’s nest with rock sugar, lotus seeds, red apples, or honey,… Regardless of the added ingredients, rock sugar should be included to give the bird’s nest a sweet taste and remove any fishy smell. However, avoid adding too much rock sugar, as it can reduce the benefits of bird’s nest.
- Raw bird’s nest should be stored in a cool, dry place, away from direct sunlight. After cleaning (or “fresh” bird’s nest), store it in an airtight container in the refrigerator for up to 1 week.
It’s so simple to make this delicious and nutritious dish. Get into the kitchen and try it now!
