- First, you should choose pieces of pork that are bright pink or light red. When cut with a knife, the meat will be pinkish-white, slightly shiny, and the fat will be bright white and firm.
- To choose a good piece of meat that is not too fatty or too dry, you should choose a piece of meat with a balanced ratio of fat and lean meat.
- Good, clean meat, not raised with lean meat additives, usually has a firm texture, the meat and fat stick tightly together, and does not feel too loose when held.
- Do not choose pieces of pork that have a bad smell, or that do not have elasticity when pressed, as this is old meat that has gone bad and is no longer fresh.
How to choose fresh eggs
- Good eggs usually have a rosy appearance, with a layer of white powder covering them, and feel firm in hand. Do not choose duck eggs that are dull in color or have a slight odor.

Marinate the pork

Season with 1 tablespoon of chopped onion, 1 tablespoon of minced garlic, 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1/3 tablespoon of seasoning powder, and 1 teaspoon of pepper, mix well.
Cover the bowl of meat with cling film and marinate for at least 1 hour for the meat to absorb the spices.
