How to Choose Fresh, Delicious Beef
- Choose beef that is bright red, clearly marbled, and has bright yellow fat.
- When you gently touch the beef, it should feel moderately soft and have good elasticity.
- Avoid beef that smells foul, is mushy, has white spots between the fibers, or is pale green, as this indicates old meat that should not be used.
How to Make Beef Jerky

1. Prepare the Beef
To remove the beef’s odor, after purchasing, rub 2 tablespoons of vinegar and a pinch of salt onto the beef for 5-7 minutes, then rinse 2-3 times with clean water and pat dry.
Once the beef is dry, slice it into thick pieces, about 0.5cm thick, and remember to cut along the grain to ensure tenderness and a more appealing look. After slicing, add the beef to a bowl to marinate.
Wash the lemongrass, remove the ends, and chop finely. Peel and mince the shallots and garlic. Peel and mince the ginger.
How to Clean and Deodorize Beef
- Method 1: Soak the beef in white wine for 15 minutes, then rinse with clean water.
- Method 2: Place the beef in a pot of water, heat for about 3-5 minutes, then remove and rinse to reduce odor. Note: Only heat to about 50°C (122°F), not to a boil.
- Method 3: Rub lemon or vinegar on the beef for 5-7 minutes, then rinse with clean water.
- Method 4: Roast a piece of ginger, then crush it and rub it on the beef, then rinse clean.

2. Marinate the Beef
Marinate the beef with shallots, garlic, lemongrass, ginger, 2 tablespoons of sugar, 2 tablespoons of MSG, 1 tablespoon of fish sauce, and 1 tablespoon of cooking oil.
Add 1 teaspoon of five-spice powder, 1 teaspoon of turmeric powder, 1 teaspoon of annatto powder, 1 teaspoon of curry powder, 2 tablespoons of chili powder, and 2 tablespoons of oyster sauce.
Wearing disposable gloves, mix well to coat the beef, wrap with plastic wrap, and refrigerate for 8 hours or overnight.

3. Dry the Beef
Preheat the oven to 100°C (212°F) for 10 minutes to stabilize the temperature.
Arrange the beef on a baking sheet and place in the oven to dry at 100°C (212°F) for 30 minutes.
After 30 minutes, remove the beef jerky, use a rolling pin to flatten it, then arrange it back on the baking sheet and return it to the oven to continue drying at 100°C (212°F) for 60 minutes.

Once the beef jerky is completely cool, store it in an airtight glass jar in a cool, dry place away from direct sunlight. Before each serving, squeeze a little lime or lemon juice over the jerky for extra flavor!

How to Store Beef Jerky
