Ingredients for Shrimp Paste with Braised Pork

Pork shoulder 500 g
Shrimp paste 50 g
Ginger 50 g
Lemongrass 100 g
Shallots 20 g
Garlic 20 g
Chili peppers 10 g
Sugar 10 g
Fish sauce 20 ml
Pepper 10 g

How to Choose Good Pork
- Color: Fresh pork has a dry outer layer, a bright red color, and a slightly firm surface. When cut, the meat should be bright pink, the skin pinkish-white and soft. The fat should be light in color, firm, and have a characteristic aroma.
- Elasticity: Press your finger into the meat and release. If it doesn’t leave a mark and the meat springs back quickly with a reddish-pink color, it’s fresh. If it leaves a mark, the meat is spoiled and shouldn’t be purchased.
- For this dish, you can buy raw pork and mince it yourself, or buy pre-minced pork.
- Alternatively, you can also use diced pork belly for this dish.
How to Make Shrimp Paste with Braised Pork

Prepare ingredients
Wash and mince the lemongrass. Peel and mince the shallots and garlic. Chop the chili peppers. Chop the green onions.
For the pork, you can buy pre-minced pork or buy a whole piece of pork, cut it into small pieces, and then mince it yourself.

Marinate the pork
After mincing the pork, marinate it with a little sugar, fish sauce, and pepper for about 30 minutes to allow the flavors to absorb.

Stir-fry the pork with shrimp paste
Heat a pan on the stove and add cooking oil. Once the oil is hot, sauté the minced shallots, garlic, lemongrass, and chili peppers. After they turn golden brown, add the marinated pork and stir-fry quickly over high heat.
Once the pork is cooked and firm, add 50g of shrimp paste, 1 tablespoon of fish sauce, and 1 tablespoon of sugar. Stir well for another 5 minutes until the ingredients are combined.
After 5 minutes, add the chopped green onions and stir. Turn off the heat. Garnish for a beautiful presentation and it’s done.

How to Store and Shelf Life
- Seal the shrimp paste container tightly to prevent air from entering, which helps the shrimp paste to mature and prevents spoilage.

- Can be stored in the refrigerator for 6-12 months.
- Use a clean, dry spoon or chopsticks to scoop the shrimp paste into a bowl before adding seasonings to prevent spoilage.
- If the shrimp paste develops an odor, changes color, or has water on the surface, it’s best to discard it.
