How to Cook Goat Hot Pot
1. Prepare the goat meat and bones
First, use a blowtorch or burn the goat skin over the stove. Then wash the goat meat, fat, and bones several times with diluted salt and white wine to remove the smell.
Then rinse again with cold water and drain.
How to clean and deodorize goat meat- Method 1: Use two ginger tubers, peel and crush them. Then knead thoroughly with 70ml of rice wine to form a ginger-wine mixture and rub it on the goat meat, then rinse with water.
- Method 2: Mix 15ml of rice vinegar with 1 liter of clean water, boil on the stove. When the water boils, add the goat meat and boil until the water boils again, then remove and rinse.
2. Prepare other ingredients
First, peel the taro, rinse and cut into bite-sized pieces.
Tips:- Taro can cause itching, when you buy it, keep the mud on the tuber, keep your hands dry and then peel it. Soak in diluted salt water for 10 minutes, then take it out, now you can process it.

Peel the shallots and onions. Wash the lemongrass and cut into pieces. Peel the ginger and slice it.

3. Cook the goat hot pot
Put all the goat meat, fat, and bones in a pot along with the shallots, lemongrass, sliced ginger, 1/4 onion and 1 tablespoon of salt.
Next, add enough water to cover the ingredients and bring to a boil over high heat. When the pot simmers, add star anise, jujubes, and dried chilies.
Cover and continue to simmer for 20-25 minutes until the meat is tender, then add 2 tablespoons of fish sauce, 2 teaspoons of seasoning, 1 teaspoon of MSG, and 1 teaspoon of rock sugar.
Finally, add the corn and taro and continue to simmer for another 25 minutes until tender, then add the tofu. Season to taste and it’s done.
4. Finished Product
Serve the hot pot, prepare pennywort, fresh vermicelli, and other garnishes. The goat meat is tender, not at all smelly, combined with the rich taro, soft and fragrant tofu, sweet and crunchy corn, and especially the rich and delicious broth.
