Prepare Ingredients
Peel and mince the shallots.
Clean the green onions and separate the white part from the green part. Mince the white part. Chop 3/4 of the green part into bite-sized pieces and mince the remaining 1/4 for garnish.
Slice the chili peppers. Adjust the amount according to your spice preference.

Prepare the Pork
Soak the pork in diluted salt water for about 5 minutes, then rinse thoroughly. To cook the pork quickly and prevent it from drying out, cut it into bite-sized pieces, about 1/3 of a finger’s width, not too thick or too thin.
Tip: You should buy pork belly or you can substitute with pork shoulder.

Marinate the Pork
Add the sliced pork to a bowl, marinate with 1/2 teaspoon of sugar, 1 teaspoon of minced shallots, and mix well.
Heat a pot, add a little oil, and once hot, add 3 tablespoons of sugar. Cook until the sugar melts and turns caramel brown. Turn off the heat, add 2 tablespoons of water, and stir well. Pour the caramel sauce into a bowl.
Tip:
- You can replace water with coconut water to enhance the richness and aroma of the dish.
- Be careful when adding water to avoid splattering.

Fry the Pork
Heat a pan, add a little oil, and fry the pork until golden brown. Add the white part of the green onions and minced shallots to the pan and fry together. After 3 minutes, add 2 tablespoons of fish sauce, 1 teaspoon of sugar, 1/2 tablespoon of MSG, 2 tablespoons of seasoning powder, and 1 tablespoon of peppercorns. Mix well.
After 5 minutes, add the chopped green onions and sliced chili peppers to the pan. Increase the heat to medium and stir-fry. Continue frying until the pork is golden brown and the sauce thickens. Season to taste. Turn off the heat and transfer the pork to a plate, garnishing with ground pepper and chopped green onions.
