How to choose fresh and delicious ingredients
How to choose delicious and quality hulled mung beans
- To ensure your cake has the right flavor, choose pre-packaged hulled mung beans sold at reputable stores.
- When buying mung beans, pay attention to the production date, expiration date, and related information printed on the package.
- Good hulled mung beans will have a light yellow color, a bright hue, and evenly sized beans.
- Absolutely do not buy mung beans if you see black, brown, or dark-colored beans mixed in, as they may be old or spoiled.
How to choose fresh and delicious pandan leaves
- Choose pandan leaves that are dark green, fresh, and intact.
- Fresh pandan leaves have a characteristic mild aroma, are thick and long.
- Avoid buying light-colored pandan leaves as they are young leaves, not as fragrant and the color is not as beautiful as mature leaves.
- Avoid choosing leaves that are bruised, wilted, or have insect larvae or eggs attached to the underside.
Where to buy the flours?
You can buy rice flour, tapioca starch, and glutinous rice flour at grocery stores, baking supply stores, or supermarkets. Buy directly at Bach Hoa XANH supermarket chain or order online at bachhoaxanh.com.
How to Make Layered Pig Skin Cake
-
Cook and blend the mung beans
Wash the hulled mung beans and soak them in water for 6 hours until softened. Then, drain the beans and steam them in a steamer over medium heat for about 20 minutes until cooked.
Put the steamed mung beans into a blender, add about 2 tablespoons of water, and blend on medium speed for about 3 minutes until smooth.
-
Extract pandan juice
Wash the pandan leaves thoroughly, chop them, and put them in a blender with 1 cup of water. Blend until smooth.
Strain the blended pandan leaves through a sieve to extract the juice.
-
Mix the batter for Layered Pig Skin Cake
Prepare 2 bowls. In one bowl, combine 250g rice flour, 250g tapioca starch, 250g glutinous rice flour, 250ml coconut milk, 100g sugar, and the pandan juice. Stir well until the batter is smooth. If the batter is too dry, add more cold water.
In the other bowl, combine 250g rice flour, 250g tapioca starch, 250g glutinous rice flour, 100g sugar, 250ml coconut milk, and the blended mung beans. Stir well until the batter is smooth.
For a smoother batter, strain both mixtures through a sieve before steaming.
-
Steam the Layered Pig Skin Cake
Brush about 1 teaspoon of cooking oil evenly over the mold. Boil water over high heat in a steamer, preheat the steamer for 5 minutes, and then place the cake mold inside to heat for about 2 minutes.
Remove the mold, pour a thin layer (about 1cm) of the pandan batter into the mold, and steam over medium or high heat for about 5 minutes. Insert a toothpick into the batter; if it comes out clean, the batter is cooked.
After the first layer is cooked, reduce the heat, open the lid of the steamer, and pour a layer of mung bean batter on top. Increase the heat to medium or high and steam for another 5 minutes.
Repeat the process of layering pandan batter and mung bean batter until the mold is full or the batter is used up.
Remove the cake mold from the steamer. To easily remove the cake from the mold, submerge the mold in cold water (do not let water overflow into the cake). Wait for the cake to cool, then remove it, cut into small pieces, and enjoy.
