How to choose fresh ingredients
How to choose fresh and delicious chicken
- Fresh and delicious chicken has a golden yellow skin, not dark, and no unusual bruises on the surface.
- Besides, the chicken meat has a bright pinkish-red color, no bruises, and when pressed, the meat is soft but not mushy or slimy.
- In addition, you should also pay attention to the size and weight of the chicken, which should not be too different, because if the chicken is small but weighs a lot, it may have been injected with water.
How to choose fresh and delicious pork bones
- Fresh and delicious pork bones always have a red color, and the meat does not turn any other unusual colors, or have any dark bruises or strange tiny spots on the surface.
- Also, when pressed, the meat feels firm, has good elasticity, is not too soft and not slimy.
- Besides, if you smell a strong chemical odor emanating from it, absolutely do not buy it because it may be pork bones that have been treated with chemicals to preserve them longer.
Where to buy traditional medicine spices
- You can easily find traditional medicine spices at oriental medicine stores and markets everywhere.
- In addition, traditional medicine spices are also widely available on e-commerce websites. However, you should also pay attention to choosing a reputable brand and check if the product is moldy or not.
- Currently, a full portion of traditional medicine spices costs about 8,000 – 13,000 VND/package (price updated in September 2021).

How to boil chicken golden yellow without cracking the skin
- When boiling, to avoid cracking the chicken skin, you should put the chicken in when the water is still cold, and the water should cover the surface of the meat.
- If you want the chicken to have a beautiful yellow color, after boiling, you can dilute some turmeric powder with water, brush it on the surface of the chicken skin, and let it absorb for 15 minutes. Then, drizzle some boiling water over the surface of the chicken skin.

Grill and roast the ingredients
Place the grill pan on the stove with all the shallots, sliced ginger, 2 onions, and white radish, and grill over low heat for about 3-5 minutes until the ingredients are fragrant, then turn off the heat.
Next, put a pan on the stove with all the traditional medicine spices and roast over low heat for 3-5 minutes. When the spices are fragrant, turn off the heat.

Cook the pho
With the broth pot from earlier, add all the white radish and onion directly and cook over low heat for 40 minutes.
At the same time, take a cloth bag or strainer and put in all the roasted traditional medicine spices, ginger, shallots, 4 coriander roots, and the peel of 1 lemon. Then, add it to the broth pot.
Next, remove all the ingredients, then season with 3 tablespoons of chicken seasoning powder, 1.5 tablespoons of salt, 3 tablespoons of rock sugar, 1 tablespoon of MSG, and 2 tablespoons of fish sauce. Stir well with a ladle and adjust the seasoning to taste, then turn off the heat.
Tips:
- You can use lemon leaves instead of lemon peel, but lemon peel will make the broth more fragrant.
- Because the simmering time is quite long, you should add a little water to the pot every 1 hour!
-
Finish
Once the broth is cooked, put another pot on the stove with 200ml of water over high heat. When the water boils, add all the fresh pho noodles and blanch for 2 minutes, then remove to a bowl.
Finally, add the chicken, quail eggs, and green onions to the bowl and pour the broth over it. Enjoy!
