Prepare the Duck
To remove the duck’s odor, rub salt and a few lime slices all over the duck. Then, rinse thoroughly with water several times, let it drain, and cut into bite-sized pieces.

Trim the lemongrass, rinse, drain, and chop finely. Clean the star gooseberry, wash, and drain.
Peel and mince the shallots and garlic. Wash and drain the culantro and Vietnamese coriander, then chop finely.
