How to choose fresh goat meat
- For goat hot pot, you should choose goat leg parts that have both meat and bones for a more flavorful dish!

How to cook Goat Hot Pot

1. Preparing the goat meat and bones
First, use a tool to singe or burn the goat skin over the stove. Then, rinse the meat, fat and bones several times with diluted salt water and white rice wine to reduce the smell.
Then rinse again with cold water and set aside to drain.
How to clean and deodorize goat meat- Method 1: Use two ginger tubers, peel and finely chop. Then knead thoroughly with 70ml of white rice wine to create a ginger-wine mixture, then rub it on the goat meat and rinse thoroughly with water.
- Method 2: Dissolve 15ml of rice vinegar in 1 liter of clean water and boil on the stove. When the water boils, add the goat meat and boil until the water boils again, then remove and rinse thoroughly.

2. Preparing other ingredients
First, peel the taro, rinse and cut into bite-sized pieces.
Tip:- Taro can cause itching, when you buy it, keep the mud on the tuber, keep your hands dry and then peel it. Soak in diluted salt water for 10 minutes, then remove, and it can be processed now.

Put all the goat meat, fat and bones in a pot along with the shallots, lemongrass, sliced ginger, 1/4 onion and 1 tablespoon of salt.
Next, add enough water to cover the ingredients and bring to a boil over high heat. When the pot is gently simmering, add the star anise, jujubes and dried chilies.
Cover and continue to simmer for 20-25 minutes until the meat starts to soften, then add 2 tablespoons of fish sauce, 2 teaspoons of seasoning, 1 teaspoon of MSG and 1 teaspoon of rock sugar.
Finally, add the corn and taro and continue to simmer for another 25 minutes, until tender, then add the tofu. Adjust the seasoning to taste and you’re done.
